flavio makes soup

First step is finding those vegetables at the bottom of the fridge that must surely be right out of use-by date. Wash them, cut them in medium size cubes and fry them for a bit in olive oil with some salt, pepper, onion and garlic. Then add whatever herbs happen to be around in the kitchen -not a lot, not all of it as a bit of green coriander must go into the soup at the end although, alas, I've run out of coriander so basil will have to make do. Basil in soup? Well, we'll see. Add water before the vegetables burn and the smoke alarm goes off (managed that, this time) and leave to boil. Luckily the cooker has a timer thing that I can set for fifteen minutes and then for another fifteen when I find the vegetables (some squash and turnip and carrot, potato and something else) are still as hard as when I cut them. After all this, put in the blender and add a bit of cream -oh, haven't got any cream. Never mind. This came out rather a sweet soup, so parmesan will not work well in it, but it is quite tasty with croutons. And there is some left for perhaps two or three meals...
